Recipe of the Month

Chewy White Chocolate & Cranberry Cookie's

White chocolate and cranberries work well, if you just want a darker chocolate cookie recipe though just use 375g of chocolate chips:
250g plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
170g butter
200g dark brown soft sugar
100g caster sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
200g White chocolate bar
Bag of snacking cranberries or "Craisins" as some call them, about 175g

Preheat oven to 170șC or gas mark 3,
Mixing instructions and method are about the same as for the Spicy oatmeal recipe, the cranberries are added whole but the chocolate needs to be chopped up very small, same size or smaller than the fruit.
Again, if you want the really chewy cookies then you may need to adjust the settings, it says 15 minutes but I find they still need to be a bit "runny" when they come out,  they then continue to cook on the wire rack and firm up once they have cooled.
 

Recipe book appeal

After chatting to various people at the open day we thought it would be a good idea to consolidate tried and tested recipes into a booklet that could be sold as a fundraiser. If you have any wonderful recipes that you would like to share with us, then please either e-mail them or write them out and leave them in the hut for collection.
